Take your Taste Buds on a Journey to Guatamala


​Sleeping Tiger Coffees is thrilled to announce the arrival of an exceptional coffee by Jorge Perez from Adiesto, Guatemala. This coffee scored an 86 on the cupping table and has tasting notes of Sweet Bread Pastry, Citrus and Papaya. Gift your palate with this tropical, custard like coffee. Currently you can find it at our Pour Over Bar and for sale in retail coffee bags. Look forward to the upcoming weeks when we perfect it as espresso as well. 
 
We are proud to partner with Onyx Coffee Importers and thankful to the Aidesto Cooperative for this lovely coffee. Here is a bit about Cooperative:

"We are an Association of small coffee producers located in the mountainous area of the Huista region in Huehuetenango. Due to the altitude, between 950 and 1,800 meters above sea level, we produce parchment coffee with special SHB quality characteristics.

We have 550 members: 150 women and 400 men, dispersed in small coffee farms located in 30 communities, which are equivalent to 30 groups. All together we farm 358.7 hectares and produce 15,000 quintals of parchment coffee per year. It is the pride of the communities where it is farmed: Villalinda, Tajumulco, San José, Regadillos, Villanueva, Independencia, La Esperanza, Guantán, Vista Hermosa, San Francisco, Buenos Aires, Casa Grande, Los Planes, Esquipulas, Ixmal, Pajal and El Coyegual, all of them in Huehuetenango.

Each producer has received the necessary training to plant and harvest its own coffee in a sustainable manner. This applies also with the wet method of milling and drying of coffee. Our goal is to minimize the environmental impact produced by the processing of the product. We care for our resources: water, soil, forest, and the biodiversity found in the coffee farms.

ADIESTO provides technical assistance services to all its members on production, harvesting and processing of high quality coffee with environmental, social responsibility and equity.

ADIESTO provides financing to its members for maintenance, harvesting and marketing of coffee. It also grants loans for the implementation of small projects in their communities.

ADIESTO locates potential customers to sell them the coffee grown by the producers, and makes efforts to produce and deliver the best product, complying with strict quality standards so that it is recognized in the international level."
